Savory Vegetable Waffles
Makes about 6-8 waffles
What you’ll need:
1 cup all purpose flour
1 cup whole wheat flour
2 Tsp sugar
1 ½ Tsp baking powder
1 ½ Tsp baking soda
1 ¼ Tsp salt
¼ Tsp ground black pepper
¼ Tsp chili powder
2 cups buttermilk
2 eggs
1 ½ cups grated cheese (Gruyere or Cheddar)
1 cup Spare Starter
3 Tbsp melted butter
What to do:
Preheat a waffle maker on medium-high heat.
In a large bowl, mix together the dry ingredients.
In a medium bowl, whisk together the buttermilk and eggs. Add the cheese, Spare Starter and melted butter and stir to incorporate.
Fold the wet ingredients into the bowl of the dry ingredients. Do not overmix.
Cook the waffles until golden brown and crispy.
