Savory Vegetable Waffles


Makes about 6-8 waffles 

What you’ll need:

1 cup all purpose flour

1 cup whole wheat flour

2 Tsp sugar

1 ½ Tsp baking powder

1 ½ Tsp baking soda

1 ¼ Tsp salt

¼ Tsp ground black pepper

¼ Tsp chili powder

2 cups buttermilk

2 eggs

1 ½ cups grated cheese (Gruyere or Cheddar)

1 cup Spare Starter

3 Tbsp melted butter


What to do:

  • Preheat a waffle maker on medium-high heat.

  • In a large bowl, mix together the dry ingredients.

  • In a medium bowl, whisk together the buttermilk and eggs. Add the cheese, Spare Starter and melted butter and stir to incorporate.

  • Fold the wet ingredients into the bowl of the dry ingredients.  Do not overmix.

  • Cook the waffles until golden brown and crispy.
