Cold Soba Noodle Salad
What to do:
Bring a large pot of lightly salted water to a boil. Add the soba noodles and cook for about 5 minutes, until “al dente”. Strain and chill under cold running water. Drain and reserve in a large bowl in the refrigerator.
In a medium bowl, combine the Spare Starter with the soy sauce, sesame oil, rice wine vinegar, garlic, ginger, chili flakes, sugar and chili crisp. Mix well and allow to sit for 5 minutes.
Add the Starter mixture to the bowl of cooked noodles, along with the chopped peanuts, sesame seeds, cilantro and scallions and toss to combine, making sure that the noodles are drenched in the dressing. Serve cold.
