Cold Soba Noodle Salad


Serves 8

What you’ll need:

9 oz soba noodles

1 1/2 lbs Spare Starter

1/4 cup soy sauce

2 Tsp sesame oil

2 Tbsp rice wine vinegar

½ oz garlic, minced

½ oz fresh ginger, minced 

2 Tsp sugar

2 Tsp chili flakes

1 Tbsp chili crisp

1 1/2 cups scallions, sliced thin

1/2 cup peanuts, toasted and roughly chopped

1/4 cup toasted sesame seeds

3/4 cup cilantro, roughly chopped


What to do:

  • Bring a large pot of lightly salted water to a boil. Add the soba noodles and cook for about 5 minutes, until “al dente”. Strain and chill under cold running water.  Drain and reserve in a large bowl in the refrigerator.

  • In a medium bowl, combine the Spare Starter with the soy sauce, sesame oil, rice wine vinegar, garlic, ginger, chili flakes, sugar and chili crisp. Mix well and allow to sit for 5 minutes.

  • Add the Starter mixture to the bowl of cooked noodles, along with the chopped peanuts, sesame seeds, cilantro and scallions and toss to combine, making sure that the noodles are drenched in the dressing. Serve cold.
