Vegetable & Turkey Chili


Serves 8-10

What you’ll need:

12 oz ground beef

2 Tbsp olive oil

1/2 lb ground turkey

2 garlic cloves, minced

3 cups Spare Starter

1 Tbsp ground cumin

1/4 Tsp ground cinnamon

1 Tbsp chili powder

1 Tbsp salt 2 cups crushed tomatoes

1 x 15 oz can kidney beans, drained and rinsed

1 x 15 oz can black beans, drained and rinsed

1 x 15 oz can cannellini beans, drained and rinsed

1 1/2 cups corn, fresh or frozen

1/4 cup chipotle in adobo, chopped

3 cups vegetable stock


What to do:

  • Heat the oil in a medium pot over medium heat. Add the ground turkey and garlic and sauté for 5 minutes.

  • Add the Spare Starter, spices, salt, and cook on medium heat for 4 minutes.

  • Stir in the tomatoes, beans, corn, chipotle in adobo, and vegetable stock. Bring the chili up to a simmer and cook uncovered for 25 minutes.
