
Cucumber & Lime with Mint Pops
Like a fancy summer spa day, but tastier and more social.
1 small Persian cucumber, chopped (about ¼ cup)
2 Tbsp plain Greek yogurt
2 Tsp organic sugar
1 Tsp chopped fresh mint
1 can Cucumber Lime Spare Tonic
Directions
- Place chopped cucumber, yogurt, sugar and mint in a blender.
- Add a splash of Spare Tonic and blend on medium speed to a medium puree.
- Add the remaining Spare Tonic and blend on the lowest speed for 10 seconds.
- Pour the mixture into popsicle molds with sticks and freeze.
Makes approximately 6 popsicles.
