Blueberry & Ginger Pops

Like blueberry pie a-la-mode with a little kick on a stick.

½ cup fresh blueberries
2 Tbsp plain Greek yogurt
2 Tsp organic sugar
½  tsp grated fresh ginger (optional)
1 can Blueberry Ginger Spare Tonic

  1. Place blueberries, yogurt, sugar and ginger (if using) in a blender.
  2. Add a splash of Spare Tonic and blend on medium speed to a medium puree.
  3. Add the remaining Spare Tonic and blend on the lowest speed for 10 seconds.
  4. Pour the mixture into popsicle molds with sticks and freeze.

Makes approximately 6 popsicles.
